I love this dish, and we have it just about every year - it can be as much or as little salmon as you need for a 3 people (I use salmon, not trout). Cook it the night before or in the morning, serve cold. I add pomegranate seeds, or soft cranberries, roasted almonds, whatever. 

 

I love a cold Christmas meal, roasts are over-rated, especially if it means one person trapped in the kitchen, stressing over the stove.
