Sponge Cake - Please Troubleshoot with me

That cake stand has been stored away for about nine years. I was thinking of it the other day and decided it deserved to be used and enjoyed, not hidden in the back of the cupboard.  Most of the cakes I make are too large but the sponge fitted perfectly. 

Thanks to everyone for your assistance.  I'm delighted with the result and will keep experimenting .

My mum has been making sponges for birthdays/fundraisers/morning teas/afternoon teas etc etc etc  for decades now, and generally they're perfect- except the last one she made for my brother's birthday, which was tilted in the oven, and wound up 15cm thick at one end and 2 cm thick (and overcooked) at the other. 

she filled it with cream and iced  it and took it to the restaurant ANYWAY and my brother, dad, all the waiting staff, and the cook came out and cackled with her. It was such a spectacular failure that it was a success!
