Sweet Chilli lamb salad - a simple, fresh salad for all the family

Serves 4
Ingredients
500g lamb rump
salt and pepper, to taste
400g can chick peas, rinsed and drained (optional)
2 lebanese cucumbers, peeled into thin ribbons
2 carrots, peeled into thin ribbons
200g snow peas, thinly sliced
4 spring onions, thinly sliced
½ cup mint
½ cup coriander
2 tablespoons sweet chilli sauce
juice of 1 lime
Method
- Season lamb then Char-grill for 3-4 minutes each side or until cooked. Rest for 5 minutes then thinly slice.
- Combine chick peas, cucumber, carrot, snow peas and herbs. Top with lamb.
- Mix together sweet chilli sauce and lime juice and drizzle over salad.
Note: You can slice the cucumber and carrot if your children prefer it that way. Make sure you use a mild sweet chilli sauce for the kids (some brands are hotter than others.)
