Feast for all the family

This dish is simple and so delicious… and cooks in just one dish, so less washing up!

Ingredients

4 chicken thigh fillets or legs, cut into bite sized pieces
1 punnet cherry tomatoes, halved
Zest of one lemon
2 tbsp lemon juice
2 tbsp capers
¾ cup olives (black or green depending on preference)
Olive oil

Method

In a baking dish combine chicken, cherry tomatoes, lemon zest and juice (increase or decrease lemon zest and juice to taste), capers and olives.  Coast with a generous amount of olive oil and mix. Bake on a medium oven for 20 minutes or until chicken cooked through.

Optional: Toss linguine through the cooked chicken mix to add extra flavour and make the dish go further.

Serves 4
