Get the kids to help out mixing and icing these delicious treats

Suzi Lamont's son Ned is five years old. When making brownies, he breaks up chocolate, chops apricots with his fingers curled inwards - like a professional - adds vanilla and cocoa powder, mixes and tastes for good measure.


Ingredients

100g butter
100g dark chocolate
2 eggs, beaten
2 tsp vanilla essence
300g caster sugar
100g wholemeal plain flour
1 tsp cocoa powder
50g pecans, chopped
50g dried apricots, diced


Method

  1. Preheat oven to 180C. Line a 20cm square tin with baking paper.
  2. Melt chocolate and butter in microwave and allow to cool slightly.
  3. Beat eggs, vanilla and sugar together in a bowl until creamy. Add chocolate mixture.
  4. Stir in flour, cocoa, pecans and apricots.
  5. Pour into tin and bake 40 minutes or until golden on top.
  6. Allow to cool in the tin before cutting into squares.

Serves 6
