Hi
As per topic title, does anyone have a recipe for the cafe style banana bread? I have a few basic recipes, but they are not quite the same. I'm after something that can be sliced, then toasted and spread with lashings of butter and won't fall apart!

Looking foward to some replies. I was just thinking this morning that my week old bananas in the fruit bowl are past their used by date.

Banana Bread
4oz butter (110g)
1 tsp vanilla essence
1/4 cup milk
1 1/2 cups SR flour
3/4 cup sugar
2 eggs
1/2 tsp bicarb soda
3 medium bananas, well mashed
Cream butter and sugar
Add vanilla and one egg at a time, beating well.
Add bananas
Dissolve soda in milk
Add sifted flour and finally milk and soda
Bake in lined tin at 180 degrees until sides of cake come away from pan (about 45 minutes)

I always use this
banana bread recipe. It's great to toast as it is not super moist or crumbly. I always add an extra banana and have also added blueberries to the mix - yummy!

I have a banana cake recipe from a Donna Hay cookbook.
It is the most moist luscious

banana cake I have ever eaten and it keeps well for 2-3 days in an airtight container.
I haven't tried toasting it but rekon it would be fab.
Donna Hay's Food Processor Banana CakePut the following ingredients into a blender:
1 cup caster sugar,
1/4 cup brown sugar,
1 cup mashed banana ( i just break it into 4/5 pieces)
125g melted butter,
3 eggs,
3/4 cup sour cream
Process until smooth.
Add 1 3/4 cups self raising flour and process until combined.
Spoon mix into a ring tin (I use a loaf tin) and bake for 40 minutes @ 180C or until it springs back when touched / cooked. It takes around 50 mins in a loaf tin.

Nell31 I was about to add my fave recipe when you use the same one! Its terrific because you dont have to do much, just measure, mix and bake. I too add the extra banana, as well I freeze them and just defrost them quickly if im in the mood to make a banana cake.

I use one similar to donna's (not mobile enough to reach my recipe book so can't post recipe right now).
I find using demerera (sp?) sugar gives a wonderful result. And if you find the bread too crumbly to toast in a toaster, try grilling it. Yum!

Just finished baking the Banana Bread suggested by Nell31 and my 2 yr old just demolished 2 slices. Smells absolutley delish!

Another one to throw into the mix, so to speak.
Fellow EB'er chipmunksliveintrees gave me this one:
Two mashed bananas
About 2 cups of SR flour, ¼ cup of sugar, 1 egg, and as much milk as it takes to make a sticky paste like substance.
Bake in over for between 30 – 40 minutes depending on thickness of paste.
This is absolutely to die for and sooo simple. Toasted with butter... omg I might have to go and defrost some frozen overripe banans... drool...

I baked d-o-n-n-a's recipe yesterday and today have been toasting, buttering and eating it all day - AWESOME

Also very easy to make with stuff you are likely to have in the pantry!

Just bumping this up. 
I made d-o-n-n-a's recipe yesterday and it was beautiful! The whole family loved it. It wasn't quite as dense as the banana bread I buy at Gloria Jeans (for example) but I did use quite a wide tin. It was definitely heavy enough to toast though. Yum!

Passionfruit icing tastes
really yum on it too! Just buy passionfruit pulp and add it to some plain icing for flavouring. Don't forget to put it in the fridge though

)

I know this is an old thread but i found it in the search and I just wanted to add that DS and I made the recipe posted by d-o-n-n-a yesterday and it was sooo good we just made a 2nd one to have for school snacks

Anyone know if donna's recipe will still be safe to eat? I madre it on sunday, IT has been stored in a irtight container. I cant visably see anything wrong with it but just not sure if i should trust it?
