Last year, or maybe the year before, the playgroup victoria calendar had a recipe for cupcakes where each child made up their own mix in a margarine container.
I was wanting to do the activity with playgroup this term, but I've lost the recipe! Before I start ratio'ing down another recipe, does anyone have the recipe I'm talking about? It used an egg and milk mix and called for each ingredient to be added by spoonfuls ( eg 1 Tb flour, 2 tsp sugar, etc) Thanks muchly! Sandy |

SINGLE CUPCAKE
2-3/4 teaspoons butter, softened 1 tablespoon superfine sugar 2 tablespoons self-rising flour 1/4 eggs 1/8 teaspoon vanilla extract DIRECTIONS Mix butter and sugar until light and fluffy Stir in the eggs, blending well after each one. Stir in the vanilla and flour just until mixed. Spoon the batter into the prepared cups Bake in the preheated oven until the tops spring back when lightly pressed Cool in the pan set over a wire rack. When cool, arrange the cupcakes on a serving platter. 5 MINUTE CHOCOLATE MUG CAKE 4 tablespoons flour 4 tablespoons sugar 2 tablespoons cocoa 1 egg 3 tablespoons milk 3 tablespoons oil 3 tablespoons chocolate chips (optional) a small splash of vanilla extract 1 large coffee mug Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly. Pour in the milk and oil and mix well. Add the chocolate chips (if using) and vanilla extract, and mix again. Put your mug in the microwave and cook for 3 minutes at 1000 watts (high). The cake will rise over the top of the mug, but don't be alarmed!
