Hi everyone,

The freezer door was left ajar last night and I have woken up to a lot of partially thawed meat. Of course I had just stocked up so have a fair bit in there, along with lots of other things which are ruined sad.gif

Soooo I have lots of chicken breast and beef mince to cook up into something.

I was thinking of making a big batch of spaghetti bolognese with the mince....any other suggestions? Anything that isn't too tomato based would be good as it tends to upset DH stomach.

With the chicken breast I was thinking of making some chicken and vege pies....any other suggestions for stuff I can cook and put in the freezer for easy meals later?

Also, I have some pork sausages I bought from the butcher, they would put straight into the freezer when I got home. Would they be ok to sit in the fridge until tomorrow night?

Hi - shepherds pie - use beef stock and some Italian herbs instead of tomatoes.

We also do mince pastry pie with same beef mix as shepherds pie. Can add all ur frozen peas, sweetcorn etc to these to use use them up too - we use frozen pastry on top only...none in dish.

Chicken casserole with veggies & diced potatoes. Use tin of campbells cream of... Something soup. The veg, asparagus or mushroom ones work well.

Chicken curry is a favorite in our house. Coconut milk, korma paste, mango chutney and whatever veggies we have at the time.

BEEF MINCE
I would make large batches of both chilli con carne and bolognese and freeze for use in the following dishes:
Chilli
Tacoes
Nachoes
Pies/Pasties
Bolognese
Spaghetti
Lasagna
Pasties/Pies

CHICKEN
Poach, oven bake or grill and use for pizzas, sandwiches, salads etc. I do this with a couple of breasts each week, but I am sure you could do more and freeze once cooked. I also often marinade or dry rub with tandoori paste or cajun spices before baking for extra flavour.

Only addition I thought of was meatloaf.

And I think the sausages would be fine in the fridge. original.gif

thanks guys, i didn't think about the mince pies too.

I think I am going to cook up the meat for chicken curry pies and bolognese mince style, then I can put into a pot and top with puff pastry for dinner or use for lasagna.

Now for the cooking!
