If you fridge them after cooking and I read somewhere recently you shouldn't eat them after 12 hrs (or any cooled meat) from the fridge.
Saying that I ate some cold sausages, not from the fridge and then thought *bugger* |

Any cold meat is a listeria risk if you are concerned. Cold deli meat is, for sure .... but listeria doesn't just spring up out of nowhere. If there *was* any present in the sausages, their first cooking would have blasted it. Listeria dies at temps above 70 degrees, and frying pans or barbeques tend to be much much hotter! If the sausages had been served on a clean plate and refrigerated in a clean container shortly afterwards, I just can't really imagine where they would have managed to be re-inoculated with listeria? Maybe if they'd been rolled around in the dirt or served alongside unwashed lettuce or other risky food like deli meats or soft cheeses .... I'm quite listeria paranoid but it doesn't make much sense to suggest that cold meats that you personally cooked thoroughly and handled/stored correctly could be a listeria risk. |
