hi! I need some ideas and inspiration. we have no oven at the moment for about maximum 6 weeks. so i'm cooking meals in microwave and on one of those little single burner camp bbq things. anyone have any good dinner ideas??we have rice cooker and slow cooker to use too.
we have 2 adults and 2 toddlers to feed. I'm stuck for inspiration..... |

Big winner in my family is chicken "roll ups". Buy a BBQ chicken and shred the flesh, put a whole lot of salad veggies on a plate, get some Mountain bread and some salsa. Everyone then makes their own roll-up, so there are not complaints!
Otherwise in the slow cooker: Apricot chicken Corned beef bolognaise (if you can brown it first in your slow cooker or on the burner) |

Stirfrys and asian style dishes can be wholly done in a single wok. You can put noodles in or do rice in the rice cooker. Otherwise simple recipes like sausages, chops or homemade nuggets only require a frying pan with veg cooked in the microwave. Frittata is an easy way of getting veg in while only using one pan. Breakfast-for-dinner could also be done all in one pan.
If you find you're really missing the oven, something like this might suffice and is pretty cheap? |

Do you have the money to buy a slow cooker ? I use my slow cooker over my oven anyway!

Big batch of curry in the electric frypan and rice in rice cooker.
Make mix for rice paper rolls in the frypan, and then the rolls themselves are just prepared in a bowl of hot water Pasta sauce in frypan and pasta cooked over camp burner (use boiled water from kettle to start pasta - much quicker) crumbed/fish/chicken or sausages in frypan with veges steamed in microwave or a salad. HTH |

we have just done this and its amazing what you can come up with!
Do you have a BBQ? If so, its pretty much an oven. I made quiche, roast, lasagna etc all on the BBQ with the lid closed. otherwise risotto in the rice cooker is pretty easy, brown the meat and rice with butter in a frypan first, then add to the rice cooker with stock instead of plain water, add in seasoning (even like a McCormacks chicken/bacon risotto seasoning? and leave to cook itself. Beef gravy in the slow cooker along with carrots, potatoes, tomatoes, mushies and a tin of sundried tomato pesto and beef stock, let it cook for 4 hours, then serve with some fresh crusty bread and a dollop of sour cream. Easy as! |

I'm another who uses my slow cooker a lot, I do pot roasts, casseroles, etc in mine. There are a lot of slow cooker recipes pinned at the top of this forum. Between that, a roaster, a wok and electric frypan, I rarely use the oven for cooking dinner. Another idea is to use your BBQ for cooking if you have one.

we uesed our bbq to cook everything when we had no kitchen. Electric frypan can do so much as well, same as elctric wok!
