Hi all,

I just bought my slow cooker yesterday and made my first meal in it tonight.
Now this meal isn't for everyone but anyone that likes curry here goes:

SPINACH AND CHICKEN CURRY

2 Skinlees chicken breasts diced

1 Diced onion

2 Packets of frozen spinach

Salt

and if you are lazy like me...

1 Jar of vegetable curry sauce

Put a cup of water in the bottom of slow cooker and then add all ingredients and cook for 8 hours on low.

This one is to die for - from my Grandma

Ingredients
1 kg chicken breast cut into large chunks
1 tin cream of chicken soup
½ cup mayonnaise
1 tbsp curry powder
½ cup bread crumbs
1 cup grated cheese
Vegies – mushrooms, carrots & capsicum

Method
1. Cut up and place vegetables on the bottom of the crockpot and cover with raw chicken pieces
2. Mix soup, mayonnaise and curry powder together and pour over chicken and vegies.
3. Cover with breadcrumbs
4. Cover with grated cheese
5. Cook on high for4-5hrs.
6. Put in the over for 15 mins or so at the end to make the top go crispy.

My crockpot is ceramic, so i just chuck it in the oven to make the cheese crispy. Doesn't seem to hurt it, but might not work with all kinds of crockpots.

Basically any casserole recipe works well in there. Last months good taste mag from Woolies had a great caserole on the cover with potato dumplings on the top. That was delish, and again, I just put it in the oven to do the dumplings.

Had to add

Stew and Dumplings

1 kg diced beef
4 potato peeled and diced
2 carrots peeled and sliced
1 onion chopped
1/2 packet of french onion soup
1 cup of water
(can add peas etc if desired)

put ingredients in slow cooker for approx 5 hours.

Dumplings

1 cup of self raising flour
salt and peper
1 tablespoon of butter
milk

sift flour and salt and pepper.
rub in butter with finger tips.
add milk till dough is wet with a knife (should be wetter than scone dough)
place spoonfulls on top of stew in slow cooker, and allow to cook for approx 30mins (don't lift to lid or they'll flop)

I made this the other day......so simple......so delicious....

‘Indonesian’ Slow Cooker Chicken

Serves 4

• 4 skinless chicken breasts
• 2 tablespoon soy sauce
• 3 cloves garlic -- crushed
• 1 tablespoon grated fresh ginger root
• 2 teaspoon sesame oil
• 1/2 teaspoon cayenne pepper
• 1/4 cup peanut butter

~ In a small bowl, combine soy sauce, garlic, ginger, sesame oil and cayenne pepper.
~ Place chicken in the slow cooker.
~ Spoon sauce mixture over the top of the chicken.
~ Cover & cook on low heat setting for 6 hours or until chicken is tender & fully cooked.
~ Remove chicken from slow cooker and stir peanut butter into juices until smooth.
~ Spoon sauce over chicken to serve.

Serve with steamed or stir-fried veggies, and rice.

Spiced Carrot Soup

based on a recipe that was in the sunday paper a few weeks ago - i made this one in the slow cooker and it was great!! and even if you're not that keen on carrots you'll like this one

1 kg carrots, peeled if you want, chopped into 1" pieces
1 onion, chopped
1 tspn each of black / brown mustard seeds, ground cumin and coriander
2-3 tspns of crushed garlic
olive oil
1/2 - 3/4 cup red lentils
2 chicken stock cubes
water as needed (at least 3 cups)
1/2 - 1 tin coconut cream
coriander to serve (optional)

heat oil and gently fry onion and spices on medium heat.
add carrots (or place carrots in bottom of slow cooker then top with onion spice mix)
add lentil then chicken stock cubes and water as required.
when carrots & lentils are nearly cooked add the coconut cream.
blend into soup consistency (or mash well) and add any more hot water required for soupiness!
serve with chopped coriander if desired.

I served mine with fresh wholemeal bread made in the bread maker, but it would be nice with a loaf of herb and garlic bread or naans or anything like that.

This one is from SFI mag - July. Very very yummy! It's supposed to serve 4 but it makes so much we get a couple of meals out of it. In fact, it makes so much that even though it is for a 3.5L crockpot, (which is what I have), it is filled absolutely chockers. If you have a 5L, you can add about 500g chat potatoes as well. I serve it with rice.

Lamb & Kumara Curry

1/3 cup plain flour
1.2kg diced lamb
2 tbsp olive oil
500g kumara (orange sweet potato), peeled, cut into 3cm cubes
1 large brown onion, cut into thin wedges
400g can chickpeas, drained, rinsed
1 cup chicken stock
1/3 cup korma curry paste
2 tbsp finely chopped coriander leaves to serve

Coat lamb in flour. Heat oil in frying pan over medium-high heat. Brown lamb in batches for about 3 mins, turning, then transfer to slow cooker.

Add vegies and chickpeas. Combine stock and curry paste. Pour into slow cooker and cover with lid.

Cook on high for 4.5 hrs, stirring every 1.5 hrs.

Top curry with coriander to serve.

Cooked a leg of lamb in the crock pot today and it was delicious, the meat fell away from the bone and was tender as anything.

Thought I would share the recipe I found on www.recipezaar.com

leg of lamb, rolled
1/2 cup soy sauce
2 cloves garlic, minced
1 package onion soup mix (1.5 oz)
5 cups water
1 large sweet onions, sliced

1. Combine all ingredients in a crock pot.
2. Cook 8 to 10 hours on low.
3. Remove roast and let set 20 minutes before carving.
4. Slice thin.

My lamb wasn't rolled, put it in bone and all (tight squeeze as my crock pot is a 3 litre).
Didn't add the onions (wouldn't fit) and didn't have any onion soup so used powdered vegetable stock instead.
Served with roast potatoes (done in the oven), corn on cob, peas, and cauliflower/broccoli cheese.
Didn't bother with a gravy as the meat was so moist, just sprinkled some mint sauce over it.

My apologies in advance for the dodgy recipe, I just go by how it looks at the time! blush.gif

About 1kg of chicken maryland fillets or whatever chicken you want to use, up to you and i've found no difference in either way, jsut chop it into 'manageable bits'
1 large tin of tomatoes
1 onion diced
2 cloves of garlic
Kalmata olives (good cupful)
juice of a lemon
some lemon zest
4 rashes of bacon diced
some tomato paste
chopped parsley
pepper to taste

Chop the chicken into manageable bits, blend all ingredients in the cooker so they are mixed thoroughly. Leave for roughly 6 hrs and serve with either creamy mash potatoes or rice.

Here's my recipe for slowcooker silverside/corned beef, my kids love it and I find it a cheap meal when meat is around $25 for a leg of lamb. Its also perfect for cold cuts the next day in fresh bread and mustard.

Silverside

1.5 kg Silverside (Bilo often has it really cheap)
1 peeled onion
2 bay leaves
1/2 cup malt vinegar
1 tbsp of brown sugar
10 cloves

Remove silverside from the bag, place silverside in slow cooker, place dry ingredients around it, pour in malt vinegar and then cold water until it just covers the silverside, mix thoroughly.

Leave on low for 8-10 hours. I usually put this on at 10 am and its perfect for dinner around 6 pm.

Served with white sauce, boiled or mashed potatoes, cauliflower and peas.
