I'm such a lucky Mumma...I have 4 gorgeous girls!
Hi there,
Does anybody have a simple cake recipe they are willing to share? By simple I mean ingredients and prep! I know using a packet is easy but I honestly reckon you can tell the difference. Any flavours..
Oh any any cupcake recipes would be appreciated too! TIA biggrin.gif

This chocolate cake recipe is simple (just throw everything in the same bowl) and is delicious and moist. My mum has made it for years and now I make it....

Chocolate Fudge Cake

1 2/3 cups plain flour
1 1/2 tsp soda bi-carb
1 tsp salt (I don't add salt as I use salted butter)
2/3 cup cocoa
1 1/2 cups caster sugar
2 eggs
60g butter, softened (nearly melted)
1/4 cup vegetable oil (I've used olive oil and it's fine)
1 tsp vanilla essence
1 tblsp vinegar (I always use brown, I reckon it makes the cake richer and more moist...my mum swears by white) and enough milk to make 1 1/2 cups

Mix everything together and beat with electric mixer for three minutes or until thoroughly combined. Cook at 180 degrees for 35-40 minutes or until cooked through.

This makes a fairly big chocolate cake so you need a decent sized tin for it. It's great with any icing or just with cream. I usually just make a chocolate butter cream icing for it but you can make it fancier with a fudgy icing for special occassions.

YUMMO!!! many thanks for posting this receipe..... i am currently in the process of making it, and can say a quick lick of the spoon before it went into the oven has my tastebuds watering...... how devine!

This is my latest find and so far everyone who trys it loves it.

Choc Cake

2 cups plain flour
2 tsp baking powder
1/2 cup cocoa
1 1/2 cups sugar
200g reduced fat plain yoghurt
3 eggs lightly beaten
1 tsp vanilla essence
1 tsp baking powder, extra
300ml water, lukewarm

1. Preheat oven to 160. Coat a 20cm square tin with cooking oil spray & line the base with baking paper.
2. Sift dry ingredients (flour, baking powder & cocoa) together, combining with sugar. Mix yoghurt, eggs and essence in a bowl. In another bowl, combine extra baking powder and water before adding to yoghurt mixture. Add yoghurt mixture to dry ingredients.
3. Spoon mixture into tin. Bake for 35 mins or until cake springs back to touch. Turn cake out and serve with yoghurt if desired.

ryan and i made the fudge cake today. very easy and my mum (who was here) loved it as did dh. mine wasn't quite cooked through but it was delicious anyway.

Wow! It's great to see so many people enjoying the fudge cake. I reckon I must have made it about 500 times since I was a kid (mum used to make dessert cakes for restaurants and I used to make up a lot of the base cakes for her).....keep enjoying it!

Would it be possible to make the choc fudge cake using all vegetable oil instead of butter??
