Hi,

A spin off from the thread about routines for working mums. I'm sure it's been done before but I'm after ideas for lunches / snacks that can be frozen and then thrown in the lunchbox (and hey, people may have new ideas original.gif ). I like to cook but don't want anything tooooo time consuming. It's just for DH and myself as DD will be going to childcare, but feel free to include kid ideas too for others that may be interested.

(Oh, and we eat anything so no special restrictions / requests)

Soft kitty, warm kitty, little ball of fur.
DH and I have the good old fashioned ham, cheese and tomato paste sandwich. Make enough for the week, freeze in ziplocks.

Then we have some stacking nude food tubs that we put yoghurt in half and fruit and nut mix in the other, or a piece of fruit.

Self crusting quiche. Cook the mixture in muffin trays and once cold stack them in a container with baking paper between the layers. I also use mini muffin trays so I can just pop one in with recess occasionally.

Usually when I cook a meal I will serve up a portion for my lunch and freeze. So I always have meals for my lunch in the freezer. I also bake muffins and freeze.

We mostly eat leftovers for lunch, but I have a few things in the freezer for when last night's dinner wasn't suitable/big enough. These are all homemade.

eg. zucchini slice

vegie sausage rolls (really nice and taste just like real sausage rolls, but lower fat and vegetarian)

Snacks: savoury muffins, fruit muffins

I need some more ideas though, so I'll be following this thread!

Ditto the leftovers. Pasta, risotto, curry, stir fry etc

Yep I love leftovers for lunch... original.gif I used to make pizza when DH was at uni (easy to eat cold) but haven't done it for a while...

Those vege sausage rolls look good!

Vegemite scrolls, pizza scrolls for lunch and mini Nutella scrolls for snack . Just make a dough, roll out flat, sprinkle/spread ingredients, roll up like a Swiss roll and slice. Bake in oven.

Lasagne ( I have recently made the hairy bikers diet one and it was soooo yum!)
Pizza muffins - quite simple - will come back with recipe.
Soup? chicken n sweet corn really easy.
Zucchini slice per pp
Quiches
Pies? One of those sunbeam pie makers makes it easy
Pasties? Pie filling inside pastry, not as liquidy though. Can also chop up ham, cheese, pineapple or whatever throw it in.
Pizza? On mini pizza bases, make them up and freeze them

Sandwiches?
Grilled chicken then just throw in some salad on the day?
