San Remo rice pasta spirals
6 tomatoes, crushed 2 tins of lentils 1/2 capsicum, diced 1 onion, diced 1 carrot, grated 1 zucchini, grated 5 medium sized mushrooms, sliced 2 tablespoons of finely chopped spring onion Put all veges in a pot or slow cooker until cooked. Might have to try this in the slow cooker. If DH wasn't doing a lamb roast with veges etc. tonight, then it would be ideal for this rainy cool weather.

How many serves does this make? Considering your daughter has a tomato allergy, it seems like a big recipe for one person.

I tend to make one big lot then fill the freezer. I live with my mum at the moment so cook for her as well. She also can't have gluten. It makes about 6 large portions, although the pasta pack says serves 4. |
