I am going to be putting on a big Mexican themed party for my sisters birthday.
I am thinking Mexican layered dip, tortilla stack, enchiladas, nachos and of course all the sides.....salsa, sour cream, guacamole, refried beans etc. Has anyone got some recipes with a twist rather than the usuals? I hosted a Mexican-themed dinner just last night!
I made: -pulled chicken - based on this recipe but using skinless chicken marylands which I shredded once cooked, and adding several smoked whole chipotles -carne asada -red cabbage 'pickled' in lime juice -coriander sauce (coriander, garlic, ground cumin and a slice of jalapeno blended together with a couple of tablespoons of water) -pico de gallo -sliced jalapenos (These dishes were served with white corn tortillas for people to put together themselves.) -guacamole topped with pico de gallo which I served with lightly toasted white corn torillas strips (I just bought the Misson branded ones from the supermarket) -a salad of roasted corn, red kidney beans, diced red and green capsicum, halved red and yellow cherry tomatoes, spring onion, loads of chopped coriander, fire-roasted and deskinned jalapenos with a dressing of lime juice, garlic and olive oil -a beef, 'jack' style cheese, and chili tortilla bake, topped with sour cream -a dark chocolate brownie for dessert I also popped our selection of hot sauces on the table for people to help themselves. I love Mexican food, and this menu went down a treat. I have also made fish tacos before which were delicious. ETA: There are some great, authentic recipes here. I don't know that this would be considered authentically Mexican, but I made this tequila lime chicken last week and it was delicious, really moist and tender.

Chargrilled corn cobs are a go - boil for 5 mins then grill and slather with butter mixed with a couple of tablespoons of sauce from a can of adobo marinated chilli peppers (online from USA foods, Thomas Dux or the essential ingredient)
If you do buy some stuff from USA foods, check out theory black beans and different colored corn tortilla chips. I did a Mexican feast one cup day and used recipes almost exclusively from Thomasina Miers - Mexican Food made simple (she won uk master chef) This is her green rice recipe - it's a beautiful colour on the table: 400g basmati 1 clove garlic 2 large handfuls coriander 1 large bunch parsley or spinach 4 tbsp olive oil 600ml stock (chicken or vegetable) or water Salt and pepper Rinse rice Whiz in food processor till smooth thick green puree - garlic, coriander, spinach or parsley with half the olive oil and a splash of water. Heat remaining oil and fry of paste for 5 mins, stir lots so it doesn't burn. Add rice, stir well to combine - pour in stock and cook as per absorption method. (The book recipe has rice finished of in the oven but I find it works well without) |

Chile con queso dip. My friends beg me to make this all the time. Seriously unhealthy, but seriously addictive.
2 Teaspoons oil 1 clove garlic crushed 1-2 tablespoons Old El Paso Jalapenos chopped (start with 1 tablespoon......VERY hot) 1/2 cup thickened cream 1 tablespoon roughly chopped coriander leaves 125g cream cheese cut into pieces 1 cup grated tasty cheese 1/3 cup Old El Paso chunky tomato salsa Heat oil add garlic & jalapenos. Cook 2 minutes over a low heat. Add cream & bring to the boil. Cook, stirring constantly for 3-4 minutes until mixture thickens. Remove from heat add coriander & cream cheese, stir until melted. Whisk until smooth. Add tasty cheese, stir to melt. Stir in tomato salsa. Serve warm with corn chips. |
