Milk chocolate, glacé cherries, marshmallows and broken up arnotts milk biscuits. Melt, mix and set in a slice tin.

Block of good quality milk choc and one of dark choc
LArge handful marshmallows, halved
6 Marie biscuits nroken up
Good handful of craisins
Good handful of peanuts or almonds

Melt choc in bowl over simmering water.
Mix with other ingredients
Pour into log pan lined with cling film
Refrigerate at least 2 or three hours before eating.

There was a good one in the Sunday Life magazine about 2 years ago, from memory (because I've made it quite a few times):

* 250g milk chocolate
* 250g dark chocolate
* 10 glace cherries - halved
* Vanilla marshmallows (about half a bag of the Pascal ones - using all the white ones and halve them)
* 90g toasted almond slivers
* 80g pistachios
* Turkish delight (I use about 9 squares - halved)
* 1/3C dessicated coconut

I tend to prepare all the ingredients except the chocolate and then I melt the chocolate in the microwave and pour it in with the rest of the ingredients. Once everything is covered in chocolate, I pour the mixture into a lined, 20cm cake tin and put in the fridge for about half an hour. Then cut into squares.

Ohhhhh now you made me want it too!!

I won the 2011 Office Rocky Road Challenge with this amazing recipe for Snickers Rocky Road (Probably the pinnacle of my career!). A delicious hunk of mess consisting of marshmallow, peanuts, chocolate, caramel and nougat...


375 g/13 ozs. milk chocolate
200 g/7 ozs. roasted unsalted peanuts
6 full sized Snickers bars
225 g/8 oz. bag of pink and white marshmallows

Line a square tin with foil. Chop up two of the Snickers bars and set aside and then chop the rest of the bars. Over a double boiler place the chocolate and the pieces from the two Snickers bars and melt this (it won’t fully melt but it will partially melt)

Meanwhile while this is melting, cut the marshmallows in half roughly if they’re large ones and place in a bowl along with the roasted unsalted peanuts and pieces of the remaining four Snickers bars. Stir so that the rubble of the peanuts and marshmallows are coated in chocolate and then spoon into the lined tray. Refrigerate or cool on a benchtop until set and then cut into pieces.

Block of chocolate melted, prefer Cadbury milk
One packet of allens snakes chopped up
One packet of pascal marshmallow (only pink and white)
Hand full of coconut

Mix; set in fridge while licking the bowl.
