|
Hi,
Given today is Shrove Tuesday (Pancake Tuesday) I was wondering if you wouldn't mind sharing your best fluffy pancake recipe. I am after a recipe for more dessert type pancakes as apposed to savory pancakes. Your help is much appreciated. |

I just use a ratio of 1 cup SR flour, 1 egg and 1 cup milk. You could use buttermilk instead to make it more deserty.

I love this recipe from Nigella. I mix in everything except the butter and let it sit for 10-15 mins. Then stir in the butter and cook. Fluffy everytime.

I use 1 cup SR flour, 1 cup milk and 2 eggs. Add a bit of sugar if you fancy and fry in butter. Very fluffy indeed!

To make fluffy pancakes I separate the eggs and whip the whites until stiff.
1 C SR flour 2 eggs 3/4 - 1 cup milk (depending how thick you want your mixture) 1 Tsp melted butter Separate eggs and beat the whites until stiff. Mix everything else together. Gently stir in the egg whites (don't mix it too much, you should still see lumps of egg white) Cook as usual using melted butter in the pan. (We generally do these as blueberry pancakes dropping blueberries on as we cook them). Thanks for reminding me it was shrove Tuesday. We might make pancakes after school for a treat. |

1 cup self raising flour
1 tablespoon sugar 1 pinch salt 1 egg 2 cups butter milk Butter for frying (Optional) 1 punnet blueberries - dot into pancakes while frying. Makes 12 small, or 4 large. This post has been edited by Miriam+1: 12/02/2013, 10:33 AM |

I use buckwheat flour, eggs, greek yoghurt, pinch of baking powder. No measuring, just until it looks right. Buckwheat flour makes a really really nice pancake.

2 cups plain flour
2 1/2 tsp baking powder 1/2 tsp salt 1 egg 2-3 tblsp melted butter or oil 1 tsp vanilla extract 500ml buttermilk Mix together dry ingredients in a bowl, whisk wet ingredients together separately then add the dry to wet and stir only until just mixed. Cook in butter for extra yumminess. These make very fluffy American style pancakes, I add blueberries and banana to the mix and serve with maple syrup. |
