I've made this one several times, and it's always been great.

I have made this 3 times in the past 3 months to rave reviews and a friend made it and entered it into a competition and got the honourable mention! Surprise Chocolate Raspberry Cake I have to say there are a few ingredients I'd never thought of putting in a cake before. Curiosity is going to get the better of me. I'll try to save some money to make this cake in the next few weeks |

This is my go to never fail chocolate cake.

The cake part of this cake is UH. MAY.ZING! (Well the whole lots is pretty scrumptious really)
It's really easy and cooks very flat, you don't end up with the big hump in the middle. For the recipe you have to hollow out the cake for the lemon curd... I accidentally ate all of the middle by myself |

Here is my go to choc cake recipe, every time i have made it i have been asked for the recipe
Hersheys perfectly chocolate cake Ingredients: 2 cups sugar 1 ¾ cups plain flour ¾ cup cocoa 1 ½ tsp baking powder 1 ½ tsp baking soda 1 tsp salt 2 eggs 1 cup milk ½ cup vegetable oil 2 tsp vanilla extract 1 cup boiling water Method: Heat the oven to 170 degrees. Grease and flour two 9 inch round baking pans or one 13x9x2 inch pan. Stir together the sugar, flour, cocoa, baking powder, baking soda and salt in a large bowl. Add the eggs, milk, oil and vanilla; beat on a medium speed for 2 minutes. Stir in boiling water until combine (the batter will be thin). Pour into prepared tins. Bake for 30-40 minutes or until wooden pick inserted in centre comes out clean. Cool for 10 minutes; turn out onto wire rack to cool completely. Chocolate butter cream icing Ingredients: 100g butter at room temperature 40g cocoa (sifted) 300g icing sugar (sifted) 40ml milk Method: Combine butter, icing sugar and cocoa in standing mixer. Mix together until combine. Add milk 1 tablespoon at a time until all combine; mix at a high speed until icing becomes light and fluffy. You can either have 2 cakes or cut the top off each cake (so they are flat) and sandwich them together with the icing and top with more icing. I normally do 2 cakes, 1 for home and 1 for work |

This one from an article in the Age called My friend the chocolate cake:
Valerie's Chocolate Cake INGREDIENTS 13/4 cups SR flour 3/4 cup sugar 1/2 cup cocoa 1 tsp bicarb soda 125g butter, melted 2 eggs 1 cup natural yoghurt (Greek-style is good) METHOD - Heat oven to 180C. - Mix dry ingredients together then add butter, eggs and yoghurt (either in food processor or by hand) and mix until smooth. - Pour into round or square cake tin* and bake about 50 mins. Icing INGREDIENTS 150g cooking chocolate 1/2 cup icing sugar 11/2 tbsp butter 3 drops vanilla essence METHOD - Melt chocolate carefully over hot water. - Cream butter and icing sugar, add vanilla and melted chocolate. NOTE: We tested the recipe in a 20cm square tin. For the two-layer version of this cake (pictured), we doubled the recipe, and put the mixture into 23cm and 16cm square tins. THIS CAKE. There is no better chocolate cake. There are a few bloggers that use this exact recipe. Apparently it originally came on the side of hershey's cocoa in the states. I've been making this cake for years and there is no better. |
