I've misplaced my recipe, which was in delicious magazine some years ago. I've googled and some versions come up, but they're not the one I'm looking for.
Would anyone have it? |

OP - i imagine the ones that come up online are not quite what you're after. I tried to find it on taste.com.au but it doesnt come up. However, when i check the annual recipe index, i found it in the March 2006 edition. Maybe some EB readers out there will have that edition and can look it up for you. If not, I know you can buy back copies...good luck!

Thanks for the replies and links.
vswannie - you're right, the soup is different to those on the links (though I do appreciate the links!) I've made it so many times, *should* remember the ingredients by now (super fussy children will only eat the soup as per the recipe.) Potato, peas, canned tomatoes, bacon, carrots, baby spinach, water, basil to finish off ... might try winging it. |

I've got March 2006 Delicious
Cup of Garden Soup Olive Oil 6 streaky bacon rashers or tin pancetta slices, finely chopped 1 small onion 2 small carrots roughly chopped 1 small leek chopped Big handfuk of silverbeet leaves, chopped 2 small potatoes peeled and cubed 2 small yellow beetroot or baby turnips peeled and chopped 2x400g cans chopped tomatoes Handful of small pasta shapes 200g thin green beans trimmed and chopped 2 handfuls of fresh or frozen peas 2 small zucchini finely chopped Big handful of spinach leaves, stalks removed and chopped Small bunch of basil roughly chopped Heat a large saucepan big enough to hold all ingredients and add a splash of oil. Fry bacon until golden, add onion, carrot, leek, silverbeet, potatoes and beetroot. Cook, stirring occasionally for 10 minutes or until veges softened. Add tomatoes then fill both cans with water and add to the pan. Cover, bring slowly to the boil, then simmer over mediu,-low heat for 15 minutes. Add the pasta and the beans, peas and zucchini and cook for 10 minutes. Stir in the spinach and basil then season to taste. Sounds yum and you're probably cooking it now anyway but I thought it looked good. |

kath07 - Many, many thanks for going to the effort of finding that and posting it here.
I'm sure the handfuk is supposed to read handful! It is a really nice soup, very light but filling and goes down well with the children. Thanks again. |
