With school starting next week (for some of us), I thought I should start baking and freezing lunchbox muffin, slices etc. Trouble is I'm not that great at baking and would love to improve that.
Do you have any idea/recipes you could share with me? Even snacks that can be eaten afterschool. We don't have any allergies here. TIA |

These freeze really well and don't become too sticky when defrosted
Choc chip banana muffins Ingredients • 60g butter • 2 cups self-raising flour • 1/2 cup caster sugar • 1/2 cup milk • 2 eggs • 2 ripe bananas, mashed • 1 cup (200g) Dark Choc Bits (can leave out choc bits if you want) Method 1. Preheat oven to 200°C. Line a medium muffin tray (12 sections) with paper cases. Melt butter in a small saucepan or heat-proof bowl in the microwave. Set aside to cool slightly. 2. Sift flour into a mixing bowl. Stir in sugar. Make a well in the centre of dry ingredients. 3. Using a whisk, lightly beat milk, eggs and butter in a jug. Add to dry ingredients, along with mashed banana. Using a wooden spoon, gently mix ingredients until just combined. Stir in choc bits. Don't beat the mixture or the muffins will be tough. 4. Spoon the mixture evenly into the muffin cases. Bake for 20 minutes or until firm on top when lightly touched. Leave in the tray for 3 minutes. Transfer the muffins to a rack to cool. |

MILO MUFFINS
Ingredients 1 & a 1/2 cups self raising flour 2/3 cup milo 1 egg 2/3 cup milk 2/3 cup brown sugar 1/2 tsp baking powder 60g butter, softened (sometimes we add some choc chips to give a bit more texture) Preheat oven to 190 degrees c. In a mixer or a bowl add all ingredients, beat until smooth. Pour into muffin or cupcake papers until 3/4 full. Bake for 25-30 minutes. |

Milo muffins sound delicious, will definitely give them a try, since DD doesn't like soft mushy things in her muffins, thanks for the recipe!

Not that this is baking but my kids love to take a hard boiled egg, boil up half a dozen at the beginning of the week and keep in fridge.
Ginger cookies and fruit cake are also favourites. Choc chip biscuits - I make them bite size to fit easily in the lunch box. |

I make these without the nuts and icing

You could make egg and vegie slices, ham and cheese scrolls or pinwheels vegie tarts etc for less sugar.
