I have just realised hidden in my fridge is 300ml tub of thickened cream that will go out of date in 2 days.
I'd rather not waste it, but i'm drawing a blank trying to think of what to make with it...

Nothing too expensive, don't want to buy too many ingredients
Dinner ideas, not sweets or sides
will eat just about anything!

anyone got a simple recipe idea?

Potato bake? Slice potatoes thinly and layer in a casserole dish. Put some sliced onions in as a middle layer.. Mix together a packet of soup mix (cream or chicken or leek) with 1/2 cream and 1/2 milk. Pour over to cover potatoes. Top with grated cheese and foil. Bake for about an hour on moderate heat and brown the top with foil off for a few mins before serving. Not healthy but yum and reheats nicely. It's was often served at family bbqs when I was growing up.

Cook some sliced chicken breast, take out of pan when almost cooked. In the same pan Sauté some onion, capsicum and mushrooms, add a splash of white wine, some chicken stock, cook for a while then add cream and reduce until thickened. Serve over fettucini. Quite quick and yummy

Potato Bake is what I'm cooking right now for dinner. But I use the lazy method - slice a heap of potatoes thinly, chop up some ham and throw it on top, then mix one masterfood potato bake packet (mmm garlic goodness!) with 300ml of thickened cream. Pour over potatoes. Bake for an hour with foil on. Then take off foil, add cheese and brown in oven. Going to have it with some chicken and maybe some salad. That way, won't overdose on the yummy potato bake.

Going to use leftovers with leftover stew for this week's lunch at work.

I don't know whether this is a cooking crime but I also use it to make sour cream if I need it, with the addition of lemon juice.

Beef Stroganoff is tasty.

brown chicken breast/tenderloins and remove from heat.

Pour cream (probably not the whole thing - more like 1/2 cup), parsley, honey and mustard (or cheats honeymustard) into the pan and warm through - place chicken back in and coat.

It's absolutely delish.
