DD wants (coloured) macarons for her birthday party. I have tried making them twice with little success. They still seem raw on the inside and i can't get them off the baking paper (even greased). They taste nice though...

So any advice would be great or recipes. What do you recommend for the fillings?

Also, can you replace the icing sugar with icing mixture (my local shops seem to be out of icing sugar)?

You can get Adriano Zumba macaron packet mix at coles. I haven't tried it, might be worth a try though.

Get rid of anything that isn't useful, beautiful or joyful.
They are best left until the next day! 12-24 hrs
before eating

Leave piped macarons on baking tray for one hour before puting them in the oven.

and make sure they are completely cool before trying to take off the baking paper.

ps I am no expert lol but have made them a few times

You cannot use icing mixture. You need pure icing sugar. That's probably your problem.

Coles/Woolies normally have icing sugar.
The key is to be REALLY gentle with the mix when you stir the almond meal through. The almond meal shouldn't be fully incorporated, it should be a bit 'streaky'. If you over mix, they collapse.
Also let them sit for 20 min for a skin to form over the top.

Just wanted to say thanks for the help. I did the macarons by scratch today and they turned out a lot better. I still have to make some improvements but the first batch came out perfect.
