So I have a big bowl of left over roast duck and I want to use it for tonight's dinner.

Anyone have any good recipe suggestions?

Risotto - with mushrooms and a splash of hoi sin (sounds weird, but it's tasty!). I usually add peas or spinach as well as the usual suspects (garlic, onion, stock, seasoning etc).

DP bought 2 Peking ducks from the Chinese grocery, and we had it wrapped in Chinese pancakes for dinner last night. There were only 3 of us to feed so 2 ducks was overkill.

I love Risotto, unfortunately DP doesn't sad.gif
