I was just reading the other thread asking if it's too early to freeze baked goods for school lunchboxes, and thought I could really do with some recipes for tried and tested recipes for freezing.

Up until now I've been a scardy cat and haven't ventured into freezing for school. But this year if DS1 goes back to school I'll have six kids going.

I already bake for school, but on a week to week basis. I'd really love if anyone would like to share their tried and tested recipes that they make up and freeze.

Also, any instructions for defrosting. I always think if I freeze things they'll go soggy while defrosting...

I will be keeping an eye on here too. I haven't frozen much for school in the past but want to be more organised this year.

I do make big batches of cookies and only cook some of them and freeze the rest in little ready to bake (small ball shapes squished down with a fork). Saves heaps of time and I can easily quickly bake just one tray of them in no time. I have also done muffins and cupcakes and frozen them which go ok except I get the sticky bit on top sometimes when they are defrosted. I just pull them out and throw them in their lunchboxes.

I also regularly make zuchinni bread as well, sorry cant find my recipe online anywhere, but there are heaps around.

Then vegie muffins, or mini quiches freeze fine as well. A variety of muffins, they can have anything in them from fruit to zuchinni, whatever I have on hand. I just use a basic muffin mix recipe, reduce the amount of sugar in it then add whatever I can find to it.
