This is my favourite Mango Chutney recipe. I use it on everything and to make Mango Chicken Curry...mmmm
MANGO CHUTNEY RECIPE 750g of mangoes, peeled and diced 1 large red chilli, de-seeded and finely chopped 60g (2oz) fresh ginger root, peeled and finely grated - I didn't peel it but it is worth doing as the peel doesn't disintergrate into the mix and you are left with flecks of skin. juice and finely grated rind of 1 small lemon - make sure that you get the wax off the lemon first 250ml white wine or cider vinegar - needs to be white wine vinegar not white vinegar. It makes a difference. 375g brown sugar 1/2 teaspoon cumin powder 1/2 tablespoon dessert spoon 1 clove of garlic, crushed 1/2 teaspoon allspice powder Method: Place all ingredients in a pot and bring to the boil, stirring often. Cook for 1 hour or until mixture is thick. Bottle in sterile jars and seal. If the bottles are sealed properly then they store for up to 12 months when you can make some more :-) This post has been edited by nakedrhubarb: 31/12/2012, 02:51 PM |
