Thought I'd start a thread where we can post what was some of the more amazing things you (or others) cooked over Christmas.
I'll start with what we had for Christmas Eve: Roast duck, basted with cranberry and aged balsamic vinegar, served with duck fat potatoes and a green salad with blue cheese and walnuts. |

|
The stand out for me was the Nigella chocolate pavlova, served with cream and berries. So crisp on the outside and chocolatey and gooey on the inside!!

Mine is a roasted pumpkin salad that has pine nuts and a maple syrup and mustard dressing. Scrummo.

My brother did a beautiful butterflied leg of lamb on the BBQ which was marinated in yoghurt, cumin and other lovely spices and SIL served it with a roasted pumpkin salad that sounds suspiciously like Monket's above. Divine

I think the duck turned out pretty well.
Brined it in OJ, ginger, garlic & herbs & spices for a day before, washed it off and dried it in the fridge overnight. Mixed together the same herbs & spices & ginger & garlic into a paste and rubbed it over the insides. Roasted on the Weber until done. Was lovely and juicy and had a slight Asian-inspired taste.
