I love sushi and would like to start making my own at home but I'm not sure where to start and what equipment I need.

Has anyone used the Leifheit sushi roll maker? Is it any good?

What equipment do you use to make sushi and where do you find your recipes? I'm not even sure what sort of rice to use and where to buy the seaweed wrappers.

I don't think you need any fancy machinery for it... it's pretty basic to make sushi. Get a bamboo sushi roller from the Asian section at the supermarket instead. I imagine you'll be saving yourself a bit of money that way.

You cook the rice, (sushi, or arborio works too), add rice wine vinegar and sugar (or mirin) to the cooked rice. Cool it for a couple of hours until it's completely cold.

The nori sheets are find in the Asian aisle as well. Lay a nori sheet down on the bamboo mat, dampen it, add a thin layer of rice over the nori (seaweed) leaving about 2cm edge free. Top with whatever it is you want to fill it with. Roll up.

If I cook 250g of rice, how much rice wine vinegar and sugar do I add? And do I add it to the water while the rice is boiling or do I mix it through after I drain the rice?

And yes, complete cooking novice here.

Fillings:
Mayo mixed with wasabi is a must. I dont like too much mayo.
raw salmon or tuna
Smoked salmon
Cucumber
Carrot
Capsicum
Chicken (all the better if it has been marinated in some teriyaki or something). Leftover BBQ chicken works well.
Avocado

You dont need a roller as the PP's said just a bamboo mat.

I think the secret to good sushi is good rice. I use the japanese one, wash it really well until water runs clear. Cook in rice cooker. Lay it out and let it cool a bit. Then pour rice wine with disolved sugar over it but just a bit at a time. Use a spatula or something to 'chop' the sugar and wine through it. Keep adding and keep chopping it in. Careful not break up the rice. You do it until it is cool. Then onto the mat and roll with fillings.

Just saw your last post. My WW cookbook has 1/4 cup rice wine to 25gm of castor sugar and a pinch of salt to 300gm rice. The WW Japanese cookbook is very good for beginners. I taught myself from that.

When I make it at home I buy the kit from the supermarket and invent my own fillings...usually derived from the stuff I buy at the shop.

I usually use thin carrot sticks, red capsicum, kewpie mayo and chicken that's been marinated in soy and garlic.

I don't think you need a special machine. Just a bamboo roller is enough. I don't even use that - just roll everything up without one (on a cutting board) and it works just find. Probably it isn't as tight as with a bamboo roller, but certainly you don't need any special equipment at all.

You can buy the seaweed sheets in any supermarket. It is very easy to find. Just put in whatever fillings you feel like. It really is kind of like making sandwiches - just put in whatever you want (within reason of course!)

I like avocado, omelet strips and tuna (I use tinned tuna because it is cheap).

Yeah, there is a special kit you can just buy from the supermarket. It has everything you need in it, except for the filling. I think it is about $8...? It's in a box.

The amounts are already measured for you so you just follow the instructions.

I made some over Christmas, first time I've ever made them, and they turned out great. I used avocado and carrot, and smoked salmon.

We have the Leifheit roller and honestly it's more bother than it is worth. It is much easier to roll with a mat than fiddle with the roller thingy.
