Today for dinner we are having:

Ham, roast potato & roast pumpkin frittata!

I have also made a turkey stock to turn into soup original.gif

Tomorrow we are having pizza to use up the ham.

I also have frozen some of the cooked turkey meat which I plan on turning into a turkey and leek pie or a quiche divan using turkey instead of chicken.

What are your reinventions original.gif

Also doing a turkey and leak pie, as well as turkey fettuccine and turkey pasta bake casserole. Tonight is chicken and ham baked risotto.

We don't have left overs as we went to my sisters for lunch. So I still have a turkey to cook on news years. biggrin.gif

One thing I do like is sort of Spanish inspired brunch. Chuck in cubes of ham, onion, mushrooms and some tomatoes (and /or pasta sauce/tomato paste) Fry it up a little, chuck into a pan and make some hollows and crack a few eggs in. Bake in the oven until the eggs are cooked. Serve with some crunchy toasted bread.

I love drama. It's so dramatic.
We had garlic prawns tonight, so used the leftover prawns and the cream that we never used for dessert.

I had a stack of roast lamb leftover so tonight am making this:

Leftover Lamb Shepherds Pie

Beats the cold meat and salad we've had for every meal since Christmas roll2.gif

I'd love some suggestions for using up the ham! We got given a 10kg free ranger ffear.gif Even with 15 of us eating it on the day we didn't get through 1/4

We had duck, turkey, ham, spring onion, egg & cheese pizza tonight.
Tomorrow we will have quiche with ham, tomato, cheese, cream, spring onion.
Will probably have turkey sandwitches for lunch.
Will finish off the pav tonight original.gif
A lot of the leftovers have already been eaten for dinner on xmas day and boxing day, just as is.

my kids had turkey pie for dinner, left over turkey and roast veggies mixed into mushroom soup and cranberry sauce, topped with breadcrumbs and cheese and stuck in the over to heat and brown. the loved it. dh and I are getting take away!

Wow, can you dice some up and freeze it for later (for pizzas etc)?
Otherwise - omelettes, pizza, quiche, frittata, anything you would normally use bacon for, muffins, pies, etc...

Oh can I freeze ham?! That would make things so much easier! I have a vacuum sealer so I guess if it's ok to freeze I can just seal it up in portions.

I sure hope you can freeze ham because I just did! The plan is:

Ham, apple and cider stew
Ham and shiitake wontons
Shepherd's pie with leftover slow-cooked lamb and the veg/wine mix it was cooked in
Irish lamb bone and barley stew
Lots of lamb, salad and mango pickle sandwiches!
