Love the stuff. I usually buy the small packs but I'd like to buy the bigger ones and freeze them into smaller portions.

Has anyone tried? Does it still have the same texture and taste as "freshly" opened from the vacuum seal pack?

I have, there is definitely a deterioration, but it is fine if you want to cook it in a quiche or something

The packs I have bought say "do not freeze". I always assumed that was because it was already frozen once, rather than due to any effect on the quality of the product. Now I am not so sure. Can anyone enlighten?

I've frozen the vac packed before. I usually buy Ocean Blue. I thought that it wasn't frozen prior unless you bought it frozen. I could be wrong, but I've never noticed it changing quality on thawing. Sometimes I can be lucky if it's reduced for quick sale, I'll buy a heap & freeze what I'm not eating straight away. I love the stuff.

If you take it out of the vacuum seal, it does lose some quality but if it stays sealed, it's fine to freeze. I buy the marked down packs and freeze.

My family owns a supermarket. All the smoked salmon/trout in the sealed packets comes in frozen.

When i had my cafe all the ss came in frozen. Defrosted fine. So you just need to make sure it hasn't already been frozen.

If you buy it from behind the counter there is a strong chance that it has already been frozen. But I don't see the problem with freezing packaged salmon as long as it hasn't been frozen before.

I bought 1kg of smoked salmon (thawed) from Costco to make a terrine for Christmas Eve.

It states on the packet that it has already been frozen so not to refreeze.

However, I don't think I'm going to need it all, and don't see a problem in freezing the leftovers. What on earth is going to happen to twice frozen fish? The texture isn't so great on the 2nd thawing? I'll probably use the left overs in a pasta sauce or something cooked so no biggie for me.
