Hi, I decided I would make a mexican layer dip for a xmas party I'm going to on the weekend.

But I haven't made one before and don't have a recipe. Probably don't need one but just thought I'd see what others do.

Does anyone make one and how do you do it.

I think there is quite a few different versions of them.

Mine is refried beans mixed with small diced capsicum for the first layer. Then salsa, then sour cream and grated cheese.

It's also known as seven layer dip. I have a friend who is obsessed with it, and makes it every time I see him! original.gif

Layer refried beans (some add chilli, ground cumin, ground coriander, canned corn), grated cheese, sour cream, guacamole, tomato salsa, chopped coriander and spring onion, sliced black olives. Some people have a layer of meat on the bottom (I guess they don't count the olives as a layer then?), some switch the order of the layers around a bit. Serve with corn chips.

Mum to many and then some!
My dip layers (which always gets heaps of praise) Goes:

1 tin refried beans
guacamole
large container of sour cream mixed with packet of taco seasoning
heaps of grated tasty
about 5 diced tomatoes
about 5 spring onions chopped finely
sliced black olives and/or jalapenos depending if u want more kick original.gif

From the bottom layer:

Refried beans
Guacamole
Sour cream
Salsa
Grated cheese
Could sprinkle with chopped spring onions for extra colour.

Refried beans - you get them in a tin with all of the Mexican, taco related food stuffs.

From the Old El Paso (brand) website - Despite the name, 'Refried Beans' are not fried! They are made from hearty Pinto Beans, blended together with mexican spices to create a delicious paste.

They are mashed beans. You can make them yourself (google a recipe) or buy them tinned. Look in the section with the taco shells in the supermarket.
