Hi
So can you hit me with your favourite ever salad to do for Christmas time?
Mine has to be a tiger prawn and mango salad which is pretty much baby spinach, avo, red onion, cherry tomatoes, cucumber and mango with some coriander and then the prawns. Dressed with extra virgin and some lemon juice.

Enlightenment is the best revenge
Mine is a Polynesian Cheddar Salad. I will dig out the recipe if anyone is interested, but it's basically cold (cooked) rice, with cubes of cheddar mixed through, diced capsicum, a tin of pineapple chunks, and then either prawns, or ham (depending on your preference). The dressing is the juice from the tin of pineapple mixed with mayonnaise. Yum!!!

Cubes of Roast Potato, Pumpkin & Sweet Potato with 'just' steamed green beans & asparagus, semi dried tomatoes, fetta and baby spinach.

Pear, rocket, walnut & peccarino cheese.

Chicken and bacon ranch salad.

Chicken schnitzel, cooked crunchy and cut up, bacon, cheese, carrot, purple carrot and ranch dressing. A weekly staple around here.

Roasted pumpkin cubed
Baby spinich leaves
Red onion
Crumbled fetta
Toasted pine nuts
Balsamic dressing

So easy but yummy

I love an Insalata caprese......really ripe, vine ripened tomatoes, fresh basil leaves and buffalo mozzarella ....extra virgin olive oil (best you can afford) black pepper and salt.

It's Christmassy because of the red, white (the cheese) and the green!

My DH potato salad, sorry I don't know the recipe so I am not much help!!

It is so nice that on Christmas eve when he is doing it I plan just to eat that for dinner and nothing else biggrin.gif

I'm boring and very non-adventurous with salads ... that's one of my NY resolutions, to step out of my comfort zones with salads. biggrin.gif

Our favourites are:

- Homemade caesar salad - I make my own garlic & sea salt croutons

- Potato salad (a mixture of sour cream, whole egg mayo, dijon, crispy bacon and red onion)

- A boring old green salad (my daughter absolutely loves this) - cos lettuce, cubes of cucumber, finely chopped avocado, shaved Parmesan cheese and a dressing of olive oil, fresh garlic and salt & pepper)

I love roast sweet potato salad. It had sweet potato, roasted Roma tomato, baby spinach, avocado, toasted pine nuts with a red wine vinegar and honey dressing.

I also usually can't go past a good potato salad especially at this time of year.
