How to you cook chicken on the BBQ? What do you marinate it in? Do you use the thigh fillets, or something else? I would really appreciate recipes with specific amounts because I ned all the help I can get when it comes to cooking. Thanks!

I'd say that thighs would be best for BBQ and marinade in honey and lemon is delicious. That's our family favourite
|

I like thighs cut into pieces and made into kebabs - honey soy, garlic soy or smoky barbecue marinade with pieces of onion, capsicum, zuchinni, tomato and some bacon threaded on - yum!
Also for cheap and easy the chicken nibbles (tiny little chicken wings) that you buy from the deli are good also. If you are going to cook breast rather than thigh, cut it into thin slices so it doesn't take long to cook - if you keep cooking until a whole breast is cooked through it will just get tough. Rubs are really good too, and a tandoori marinade is excellent. You can of course also barbecue a whole chicken, or several, if you have a barbecue with a hood - sooooo much better than in the oven. And it probably sounds super bogan but cooking one with a beer can up its bum really does keep it nice and moist and impart a good flavour! |

I was just about to suggest the 'chook on a can'.
Easy way to cook a whole chicken - basically you just sit a whole chicken on a beer can and sit it in the BBQ and close the lid. If you leave some beer in the can (or replace it with water/stock/wine/whatever) then it steams up while cooking and keeps the chicken moist and adds flavour. Just rub the outside of the chicken in some oil or butter and some spices (even just some garlic and herb salt is good) Here's an example http://www.youtube.com/watch?gl=AU&hl=...p;v=envkFOn2AyQ (but if you use a standard size can, you don't need to cut the top off it) Otherwise I like to fry up chicken pieces (usually sliced breast, but thigh would work) in ginger, garlic, salt and pepper... and a squeeze of lemon just before you eat. |

I've only ever done marinated breast fillets - everybody loved them if that helps
I made a marinade of soy sauce, crushed garlic, ginger and a drizzle of honey. Cover the chicken in the marinade and let it sit in the fridge for a couple of hours. Have your BBQ really hot and pop on the hot plates. Try not to turn the chicken too much - aim for crusty/caramelised. |

I normally use breast filets which I butterfly.
I use a marinade of: 1 bunch chopped coriander 1 lemon zested (plus about 1 tablespoon of juice) 2-3 tablespoons of vegetable oil (I normally use whatever is in the cupboard) 1 tablespoon of sweet chilli or hot chilli sauce (or a ratio of both) 1/2 teaspoon sugar Plus a few dashes of fish sauce Salt and pepper to taste Whack the whole lot in some large ziplock plastic bags and remove as much air as possible. Marinate for at least a couple of hours in the fridge. Remove 1/2 hour before cooking to bring back to room temp. Turn the heat up high on the BBQ and preheat. Cook until juices run clear (turning occasionally) If the fillets are thick and you feel that the chicken may burn before its cooked right through, turn the heat down and close the hood for a few minutes. |
