I'm considering doing a bombe alaska for christmas dessert. Has anyone made one? They look easy enough in theory, but would love hints from those who have done it before. Would particularly like to know if I can prepare it in advance? I realise it is largely ice cream however apparently the meringue acts as an insulator?

If you have a kitchen blow torch, you can use that instead of putting it in the oven. The meringue is supposed to be italian meringue, which is made with hot syrup, so 'cooked' already.

Make sure the ice cream is cold , I left it in the freezer over night, and good quality, the meringue isn't to thick, and use a blow touch, work quickly!

You can do the ice cream part ahead of time and leave in the freezer.

The meringue, I would make fresh on the day and use a blow torch as PPs mentioned. Keep the layer thin and work quickly.

My very clever Aunt made one about 3 or 4 Christmas's ago and while it looked great, she said it was sheer hard labour (she never said 'labour of love'!).

This is a lady that can cook almost anything and it's a complete success.

Every year a recipe magazine will feature a Bombe Alaska on their front cover - they look so pretty but scream hard work in my opnion!
