Ok, this is Mamma Maria's famous Tiramisu. I worked with a lovely Italian girl who would bring it to work whenever cake was necessary. Her Nona would make up a double batch for us. I have made it for the last 15 years and always get comments on how amazing it is. Enjoy!

1 packet Saviardi
250g Mascapone cheese
3 large eggs
3 heaped Tbs castor sugar
1/2c Masala (ouvo)
1/2c espresso coffee cold
cocoa

Separate eggs and whisk whites until firm
In a separate bowl whisk egg yolks, cheese and sugar until light and creamy.
Whisk in a good Italian slug of Masala
Gently fold 1/2 egg whites to soften mixture, fold in the rest.
Mix Masala and coffee together and dunk (don't drench) saviardi biscuits.
Spoon egg/cheese mix over layers of biscuits and repeat, finishing with the egg/cheese mix
Dust with cocoa.

Best eaten the next day

OMG I love Tiramisu. I know, not helpful to the post but i just LOVE the stuff. My DH has a friend who has married an Italian and everytime we catch up for dinner/lunch/BBQ we all bring a course each and she will ask 'what should I bring'......everyone answers unanimously 'TIRAMISU''. She makes the best. It is so soggy, sweet and yummy.

Oh and I have a 'Tiramisu in Rome' story too....another day. I am starting to salivate just thinking about it.
