I bought a slab of chocolate sponge to make DD1's birthday cake and there is a large amount left over.

Does anyone have any good ideas for what I can do with it? Something Christmassy is preferred - I was thinking making something similar to rum balls

Trifle? Defrost some frozen raspberries, cream, the broken up cake, all in a bowl, leave in fridge overnight then decorate with a crumbled flake

I have a recipe for Chocolate rum truffles that uses chocolate cake as a base. Very rich.

1 chocolate sponge (about 350g)
1 tin condensed milk
1/4 cup rum
1 Tblpsn instant coffee
1 Tblspn cocoa
Milk or dark chocolate
Chocolate sprinkles


Crumble the cake. Dissolve the coffee and cocoa in the rum. Sprinkle over the cake crumba nd mix to combine. Stir in condensed milk a bit at a time until mixture forms a thick dough (I usually find it needs most of the tin, but it depends how moist the cake is).

Refrigerate mix for 1 hr. Roll tspns of mix into balls. Refrigerate or freeze the balls to make the, eaiser to dip. Dip in melted chocolate them roll in sprinkles. Alternatively, you can roll non-frozen balls in coconut, like rum balls.

I freeze 'extra' cake (eg, when I bake a cake I chop it in half to eat to avoid hubby and I gorging unnecessarily) and later use it to make cake pops or trifle.
