> Potato Salad, No Mayo

Hi all!

We are going to DH's family christmas on Sunday and I am bringing a salad. I have thought it would be best to bring a salad that I will actually be able to eat and I really really am craving a creamy potato salad - especially with BBQ meats (which is what we are having) But I don't know what to use for the dressing.

I am going to cheat and use cans of tiny tots (as opopsed to boiling and then chopping because stuff it I am pregnant), boil some eggs, chop up onion, tomato, and some gherkins but I don't know how to make it creamy without using my mayo.

Any one got any ideas of how to get it creamy with no mayo?

Sour cream.

I make a potato salad with a pot of sour cream, couple of teaspoons (to taste usually I add more!) of dijon and whole grain mustards, a dash of red wine vinegar and ground pepper to taste. I top it with chopped spring oinions or chives if I have them in my garden.



BTW store bought mayo real egg in it so you can eat it when pregnant.

mix some creme fraiche with some philly? Never tried it, but it's an idea.

Yum potato salad! You can eat store-bought mayo in a jar - just not homemade mayo because of the raw egg. That's my understanding anyway!

If you buy the mayo check the ingredients as many don't have egg and are fine

If the reason you're not using mayo is because you're pregnant then you will be fine to use most store bought mayos, particularly if you find one that doesn't have egg in them.

I do one with potatoes, lemon juice, lemon zest, olive oil, heaps of dill, chopped capers and spring onions, and salt. Yum, but not creamy at all.

Praise make a 97% fat free mayo which has no eggs in it at all.

However read the lables - very few brands of mayo actually use real egg.
