I have a whole heap of cheese that wasn't put out for our party, any ideas what to use it in? It's Swiss, tasty, cheddar, fetta and Monterey Jack. I also have a whole heap of cookies from my subway cookie platter We had, any ideas what I can use it for?Your ideas are well appreciated as I don't want to waste and I can't see us using all that cheese as we're not big on cheese on its own, we mainly use it in pasta and lasagna.

The harder cheeses like tasty and cheddar I would grate and then freeze - then use it as you need it. We store all our grated cheese in the freezer so it doesn't go mouldy and it thaws very quickly.
I would freeze the cookies as well - they are cooked fresh instore so you should be able to freeze them and then just defrost as required. |

The Monterey Jack I would probably use in a recipe for something Mexican-style (Google Monterey Jack Mexican recipes). I'm not actually sure what else it is used for, I've only ever heard of it in that context. Perhaps an American EBer will have more ideas.
I've used Swiss cheese before in a yummy chicken and pesto dish. Season chicken breast fillets, fry in a pan til golden on both sides. Remove to a baking tray, spread with pesto (basil and sundried tomato are both nice), top with a slice of Swiss, bake in the oven til the cheese is melted and chicken is cooked through. Fetta - lots of different things. Feta fritters, mixed through pasta or in a Greek salad, mixed with spinach for filo parcels. I saw a recipe on EB ages ago for a really nice pasta sauce that was made from fetta, sundried tomatoes, roasted capsicum, lemon and parsley, whizzed together in the food processor. The cheddar and tasty I would probably grate and put in a bag in the freezer if I couldn't think of a use for them right away, and use as normal for topping pizzas, toasted sandwiches, lasagne, etc. All else fails, mix them all up for mac and cheese. Subway cookies: eat as is. Yum. Or maybe you could crumble them up and serve with vanilla ice cream? |

I would probably sit and eat it till I was sick but that's probably just me. Otherwise some spinach and cheese filos, you could freeze them for later use.
