I want to do a glazed leg of ham, for Christmas this year- does anyone want to share a recipe?

I don't have an exact recipe so, it goes like this:

Make a criss cross pattern on the rind of your ham. To make the glaze, get a small jar of marmalade. Add 1 or 2 teaspoons of dijon mustard, freshly ground salt & pepper and a swish of olive oil. Stir to combine. Smother the ham with about 1/2 of the glaze and bake in a slow/moderate oven for about an hour. Use a pastry brush to keep glazing with the remaining mix (to keep in moist).

The cooking time depends on the size of your ham. You're essentially aiming for the glaze to become sticky and caramelised (and glossy). It's easy for the glaze to burn so don't have your oven up too hot.

Sorry it's not an exact recipe. I saw a similar idea in a recipe magazine once and just kind of made it up as a I went along.

Everyone loves my baked ham but it is very dependent on the quality of your ham. I tend to spend a bit more and buy ham from a delicatessen that is free-range, organic. I find the supermarket hams a bit hit and miss quality/taste wise.

I googled and found my own post on EB cool.gif

I haven't made it since 2009 but with hams at competitive prices, I thinks it's about time to make it again.

This has become MY favourite and a favourite of many that visit.... can't remember which magazine it was in originally - Delicious, Good Taste, BH&G.... take your pick LOL

Lime & Macadamia glazed Ham
350g jar Buderim’s Ginger, Lemon & Lime marmalade
2/3 cup dark brown sugar
2 tablespoons Dijon mustard
2 tablespoons sweet chilli sauce
1 cup macadamia nuts, chopped (100g?)

Line a roasting pan with 2 sheets of baking paper.

Remove rind from ham. (see below)
Score into diamond pattern.

Position oven shelf in lowest shelf position in oven (this is because it is heavy and you won’t want to drop it on yourself while you are trying to get it out)
I used the covered BBQ, which was excellent.
Preheat oven to 150’C
Combine all ingredients in a bowl. Spoon half the mixture over surface of the ham. Cook for 45 mins. Remove from oven. Carefully spoon over remaining glaze. Cook for a further 45 mins or until golden. Slice. Serve hot, cold or at room temperature.

Get rid of the rind then cover it in apricot jam then use the apricot jam to stick slivered almonds to it.

That one is the one that was/is featured in the latest Coles book!

It sounds really really yummy.

I did one last year, but I'm stuffed if I can find the recipe again. I'm pretty sure it had apricot jam, mustard....... and....... DD thinks Honey.

I think I will just do the Lime and Macadamia one this year.
