I'm attempting to make a Christmas cake for the first time this year, but there are literally hundreds of recipes out there. Share with me your fav recipe and any hints and tips so I don't make a dud!

This is my go to fruit cake recipe for my Christmas cakes.
Only changes are: Change rum for Brandy and use at least double the amount. In regards to the glacé pineapple and apricots I just use pineapple or other similar glacé fruits. http://aww.ninemsn.com.au/food/freshtv/790...tion-fruit-cake |

This is my favourite recipe
http://www.taste.com.au/recipes/20945/spic...hisky+fruitcake My tips You need to use irish whiskey (Paddy's is our favourite) You definitely need to line the cake tin as directed inside and wrap it in the newspaper on the outside as directed. If you can leave the fruit for overnight or longer you will get a better flavour. I have made mine in the past for about 3 weeks and topped up the whiskey every week or so and ended up using nearly a bottle of Paddy's (maybe a bit of overkill but we love whiskey in our house). I don't put the orange rind in as we are not big fans of it. Forgot to add that I usually bake my cake in a square tin as I like the way it slices up once cooked. same cooking time I usually end up making 2 of these cakes in the lead up to christmas as my hubby eats onbne and then says we have no cake left for christmas day so I have to make another. Its a great recipe as it can be done quickly (no need to macerate the fruit for months before hand) and ends up with a lovely fruity moist cake.
