OK, I have a large tin of tuna for dinner tomorrow night - any ideas. DH is off dairy so not tuna mornay...

Can use soy milk - could get away with an egg but no cheese.... better still no dairy at all...

So what can I make for dinner tomorrow night rolleyes.gif

I do variations of pasta with tuna, capers, marinated artichokes, halved cherry tomatoes, garlic, lemon juice and a bit of butter or olive oil ... chilli if you're into it. So quick easy and delicious original.gif

Tuna and Sweet Potato cakes. OMG! Sounds strange but oh so very good. http://www.taste.com.au/recipes/2601/tuna+sweet+potato+cakes

Just cut the egg and "work" the mixture longer, or add a handful or two of instant oats as an egg-free binder. Make sure to chill it for 15-30 mins before cooking to help it hold together. Sweet chili sauce is GREAT with these. Steam or sautee some veggies to go with it. I like asparagus and corn with it and/or a salad with tangy flavors like olives or pickles. These were inhaled by adult and toddler alike.

Fried rice with tuna
Jacket potatoes with tuna, corn and mayo
Tuna fritters (thehealthychef.com.au has a good recipe)

There's nothing that has dinner covered quite like a tin of tuna!

So true!

Pretty much all our tuna meals have been mentioned except for a tuna rice salad that I do. Just cold brown rice mixed with small pieces of cucumber, red onion, red & green capsicum and anything else I feel like sometimes corn and peas. Mix in the tuna and serve with whatever dressing you want.
