Im in the process of cleaning out my deep freezer to make room for all the meals im going to cook so I dont have to worry about it when the baby arrives.
What meals and snack foods do recommend I make to freeze? |

a big vegetable lasagne is always nice - eggplant, sweet potato and any other vegies - I always cut it into meal size portions and then pop it in another bigger freezer bag with the date, contents etc. Dont include mushrooms they dont freeze well (IMO).
Other things that are nice are - minestrone soups - in glad containers - single serve. Beef Goulash / Stroganoff or chicken curry (but add any evap milk, coconut milk or sour cream after it is reheated) My kids will always have spagetti bolognese mince - so that's a good one too. Tuna Bake - Garlic Bread - zucinni slice is always a favourite too - Cut it up into servings and pop it in a bigger bag with the date cooked - and the title etc. Those glad throwaways are really good for the freezer because you can just throw them in the microwave... |

Minestrone soup. Freezes and tastes well. Muffins n banana loaves and carrot cakes! Lactation cookies but not for freezing. However I am so busy to snack at all, only have time for quick meals! And due to hormone changes I suppose, the lactation cookies which I couldn't stop eating before gvg birth, I am totally not interested anymore.
Btw anyone knows if I can freeze lactation cookies? Baked so much think they are going to go moldy if I don't finish them soon. |

i've had success with ham & cheese & mustard sandwiches, wrapped in alfoil and freeze. All you need to do is throw them in the sandwich press in the foil. Then by the time you have remembered that you put it in there it is ready!

I tend to do a cook up for our lunches (which serves as quick and easy dinners as well) I freeze them in single serves. The best things I find:
- sheps pie - canaloni - honey mustard chicken - chicken stir fry (not so much beef stir fry don't know why) - pasta bake - lasagane (sp?) - spag bog sauce (this is delish on its own) -taco mince so all you do it bring it out - soups - casserols My DH does freeze in ham and cheese rolls or s/w's muffins freeze in well as well. |

Mac and cheese
Eggplant 'lasanga' (use eggplant instead of pasta) Spaghetti bol Risotto Soup (For me it's all carbies!) i've had success with ham & cheese & mustard sandwiches, wrapped in alfoil and freeze. All you need to do is throw them in the sandwich press in the foil. Then by the time you have remembered that you put it in there it is ready! This reminds me - pizza can work, especially if it's a 'stuffed' pizza like pide or calzones |

I loved having individual serves of soup and homemade salmon patties in the freezer so all I had to do was reheat in the microwave for lunches.

Savory mince - you can turn it into shepards pie, lasagne, pie, have it on toast, spaghetti.
Chicken pie filling - you can use it the same way as savory mince - having a nice thick sauce over it is fantastic! Pizza Bases (esp if you need gluten free ones) (add toppings if you like) Homemade stock for risotto Soup Slow cooked casserole Mini meatballs (I bake mine in the oven and then freeze) Dessert slices (apple, date and oat is one of my favorites) Seasonal stewed fruit Meatloaf Sauces and veges (just add meat - sweet and sour is good like this) If potatoes are cheap I also do cupfuls of mash (great for shepards pie, fritters etc) Vege/lentil/corn patties or fritters Premade made rissoles (mix in herbs etc, roll to size, flatten and freeze) I also put on labels as to what ingredients there are so I can remember when I get it out! |

Check out once a month mom, lots of ideas there.
I'm doing the same at the moment and currently have Taco/nacho mince Hoi sin beef strips and stirfry vegetables Chinese beef strips Meatballs Pasta sauce I still plan on making Apricot chicken Sweet and sour chicken Honey mustard chicken Vegetarian lasagna And what ever else I find that interests me. |
