Ok, so I have my staple potatoe recipes...a great mashed potatoe, herbed roast potatoes and scollop potates, occasionally baked potatoes, but am now bored with making all of these.

What else can I make??? I have thought about rosti, but these seem a little hard to make.

Any other ideas?

Get thee to a library and borrow A Passion for Potatoes by Paul Gayler.

EVERY recipe in that book is a delicious winner - plus you discover things that you can adapt to everyday potatoeing too!

Potato and leek bake. Slice up a couple leeks and a couple potatoes. Sauté leeks until soft. Add potato to pan and add stock to just cover (chicken or veggie). Add a handful of sliced black olives. Simmer until potato soft and then tip it all into a baking dish. Sprinkle generously with Parmesan and chuck in oven on high until Parmesan is crispy. Can serve as a side, but we often eat on its own with just some rice.

Polish potato pancakes. Placki. Very easy and very delicious.
1 kg of potatoes
1 onion
2 eggs

Put through food processor. Season with salt and pepper.
Fry dollops of mixture in a frying pan heated with butter or olive oil for a few minutes each side.
Serve topped with sour cream, dill and chives.

peel and slice some potatoes and then layer them in a microwave dish. Cover with Tomato Supreme (from the canned vegies aisle), microwave for 20mins on high. Cover with cheese, microwave for another 10 mins.
My MIL got me onto it, it's freaking delicious and easy as.
You could do it in the oven, but she said it takes 4 times as long.

I microwave waxy/new potatoes (however many your family will eat) and when done I slice them into 1cm thick rounds. Line a baking tray with baking paper, put potatoes on the bottom. Top with thinly sliced onion, thick sliced tomato, some crushed garlic, lots of baby spinach, kalamata olives and white fish fillets of your choice. Drizzle with extra virgin olive oil, cover baking dish with foil and bake in a moderate oven until fish flakes.

I do Jacket Potatoes - its quick and easy. Wash and clean (do not peel) potatoes and prick the potatoes all over with a fork then put in a bowl with some water and cover - microwave until cooked.

Cut a criss cross shape into each potato (as if you are quartering them) but do not cut all the way through. Top with sour cream, fried up mushroom and bacon and add chopped shallots and grated cheese on top - to die for!

These can also be boiled until tender then put in the oven wrapped in foil to crisp up.

I love jacket potatoes as it is so easy to alter and adapt using different toppings - top with left over spag bol sauce, baked beans etc - the sky is the limit!

Everyone loves when I make Potatoe Skins. I cut bigger size potatoes in half and using a spoon, spoon out most of the potato on the inside (I save the inside potato to make Vegie Frittas).You could soften them in water first, but I don't bother. I then add a little bit of oil, salt and pepper and cook them in the oven at 180 degrees for about 20 mins. Then pull them out and put on bacon pieces, and cheese but you could add any topping you like. I then put them back into the oven until bacon is crispy and cheese is golden brown. When they come out I drizzle with sweet chilli sauce and have sour cream to put on top if people want it. Not the most healthest dish but nice for a party type food or starter. They don't last long original.gif
