As a kid, Mum used to cut a banana vertically down the middle from end to end (not all the way through, about half way into the centre). She'd then stuff the 'cut' with squares of chocolate (usually from a good old block of Cadbury dairy milk), wrap in foil and put on a low heat BBQ (usually while we were having the dinner from the BBQ). A few mins later we'd open the foil and scrape the hot choclatey banana over vanilla ice cream!

It's a flavor I'll never forget!!

Yum. I haven't done this in a while..

My favorite way to eat bananas is to peel & eat but I also really like the recipe already posted for banana & yoghurt muffins and yoghurt soft serve.

Banana breads/cakes don't usually do a hell of a lot for me for some reason...

Banana cake:

2 cups plain flour, 3/4 cup sugar, 2.5 tsp baking powder, 2 tsp cinnamon, 1 tsp ginger, 3/4 cup cream or milk, 3 eggs, at least 1 cup of pureed banana, 150ml melted margarine.

Mix dry ingredients, then add rest mixing well. Oil a cake tin, sprinkle with breadcrumbs, pour mix in. In the oven at 175 degrees for 50-60min. Cool for 10 in the tin before turning it upside down.

Hardest bit is leaving it alone for a bit! It tastes best at about day 3
. Yum going to bake this in the morning as i have lots of spare banana's left.

Really easy and tastes devine.


Caramelised bananas with maple pecan crumble

Ingredients

30 g dry rolled oats
2 Tbsp desiccated coconut
20 g pecans, (2 tbsp)
2 Tbsp brown sugar
4 individual fresh banana, lady finger or sugar, peeled, halved lengthways
2 Tbsp maple syrup

Instructions

1. Preheat oven to 180°C or 160°C fan-forced. Spread oats on a baking tray. Bake for 8–10 minutes or until toasted and golden, adding coconut and pecans for last 5 minutes of cooking. Set pecan crumble aside to cool.


2. Preheat a chargrill or barbecue over high heat. Sprinkle sugar over cut side of bananas. Cook bananas, cut-side down, for 2–3 minutes or until sugar caramelises. Turn and cook for 1–2 minutes or until heated through. Transfer to serving bowls or plates.


3. Drizzle grilled bananas with maple syrup and sprinkle with pecan crumble.

We use to make this when we were little and also in scouts, but added marshmallows in with the chocolate.

We did that when I was in Brownies as well - we also got an apple, cut the core out and replaced it with a Bounty, wrapped it in foil and tossed it in the fire. Sounds REVOLTING now, but I'm sure I loved it as a kid!

I love banana sliced thinly into a bowl, sprinkled with a tiny bit of raw sugar and then with a little bit of just slightly warm milk poured over the top.
DH thinks its sick.gif but it's my ultimate comfort food. happy.gif
