OK so OAMC stands for Once A Month Cooking - which i'm thinking of giving a go - mind you, maybe i'll start more on a fortnight's worth, so i can mix and match... A welcome relief to my poor upright freezer which is house to bread and iceblocks and that's about it.
The only thing is that i've never attempted to freeze any meals EVER, let alone freeze them with the intention of eating them ever again lol ... So basically my question is for all the EB domestic godess's out there, do you have any recipes (tried and tested) that you have successfully frozen and thawed out etc etc and lived to tell the tale?? I SWEAR IN 2006 I WILL BE ORGANISED!!!!!!! |

Here are some things you can make and freeze:
Chow Mein Bolgnese Sauce Chilli Co Carne Shepherds Pie Chicken Curry Macaroni cheese Soups:pumpkin, pea and ham, etc Quiches Chicken stock Plain rice Lentil soup I have made and froze all of these, and have eaten them defrosted and they all taste great, retain their flavour |

Lasagne works real well.
Ive found things that dont work so well are potatoes (mainly mashed) and pasta needs to be very al-dente! Ive been making up a double batch of dinner latelyadn freezing the leftovers!!! HTH paulette |

Just be careful of containers. I have tried before and found casserole containers with glass lids and using glad wrap just doesn't work well as the lids get knocked off and the gladwrap loses it's stick.
Casseroles with liquid seem to work best. Stew Chicken baked in BBQ sauce Soup also works if you add more hot water to it. |

ohh, just had an idea, i know it's not OAMC as such, but putting raw meat in marinades and freezing working brilliantly. as the meat freezes adn defrosts it really takes on the flavours of the marinade. you still have to cook of course but you don't have to wait for the marinading part. one of my other favourite tricks is to grill a few kg's of chicken breasts and freeze seperately - great to chop, dic eor shred into meals and saves time again, and also frying up mince and freezing in meal size portions. just saves that little bit...

Felicity's easy peezy Shepherds pie
600grms of lean mince 1 onion 1 cup each of diced carrot, sliced zucchini and celery 1 cup each of small broccoli & cauliflower florets 1/2 cup each of frozen peas, corn and green beans 2 level teaspoons of beef stock powder 2 level table spoons of Worchester sauce 2 level table spoons of oyster sauce 2 level table spoons of tomato sauce 1/2 cup of gravox powder 3 cups of water Potato top At least 1kg of spuds made into mashed spuds Chop and prepare all veggies including onions, microwave all the veggies in a little water on high - approx 10 mins. Cook mince - add stock powder, gravox, tomato sauce, Worchester’s and oyster plus water. Once mince is cooked and boiled add drained pre-cooked veggies and simmer for 5mins. Stir occasionally as the mix can get stuck to the bottom. Mash your spuds - spread over meat mix using a fork. Pour into a large dish preferable lasagne dish, spread over spud mix and sprinkle over grated cheese and put in the oven until cheese is melted. This makes heaps and freezes really good. *** You can use more of one veggie if you prefer. This makes enough for about 8 large serves - When using a large (maxwell and williams lasagne dish). or 6 huge servings. |

Hi, just in response to mash potatoes not freezing well. I have found that if you add about a tablespoon of sour cream to your mash potatoes, it not tastes great but also freezes well and still taste yummy once it has been defrosted.
