Does anyone have a recipe for doing something like this? I did have it but I gave it away because I never used it
I wanted to do something for lunch today..
Ta anything will help!

SMOKED SALMON & CUCUMBER CLUB SANDWICH
250g light spreadable cream cheese
1/4 cup greek style natural yoghurt
2 Tbs mayonaise
1 large cucumber
1/2 bunch corriander (appox. 1 cup)
1/2 tsp finely chopped red chilli
1 large loaf bread
200g smoked salmon sliced
Sray the Bake 2 Basics Jel Ring with olive oil spray and seal.
Combine the cream cheese, yoghurt and mayonaise in the Bake 2 Basics Small Bowl with the Tupper Chef Spatula until very smooth.
Trim ends off cucumber and cut horizontally using the Tupper Chef Utility Knife. Remove cucumber seeds with a teaspoon, remove the skin using the T2 Peeler and then shave the cucmber into long thin slices. Place in the Bake 2 Basic Large Bowl.
Roughly chop corriander and finely zest the lime using the Bake 2 Basics Citrus Wonder. Combine corrianger, zest, chilli and 1/4 cup of cream cheese mixture with cucumber, seasoning with coarse ground peppercorns.
Trim bread crusts with the Tupper Chef Bread Knife and lightly spread both sides of each slice with cream cheese mixture, then cut in half.
Place bread in base of Jel Ring (approx, 14 pieces), allowing a slight overlap. Distribute smoked salmon over the first layer of bread then cover with another layer of bread. Top with cucumber and cream cheese mixture, pressing down quite firmly. Arrange remaining bread pieces in a final layer to cover completely.
Seal and express air. Refrigerate for 15-30 mins.
To sere, remove seal base and invert Jel Ring onto serving plate. Remove inner seal, then remove the ring mould.
Slice and serve.
