The best lamingtons are made with day old sponge and then left for another day.

Anything other than sponge, chocolate and coconut is unecessary

Strained raspberry. I really don't like cream filled lamingtons!

Nondescript fake jam. Its a nostalgia thing.

But if I was to make them from scratch, I'd go for strawberry but happy with either.

Raspberry for me. and maybe cream. i’m not against these fillings in lamingtons - although just sponge, chocolate and coconut is probably more traditional - but i find the sponge is often dry...and is somewhat improved by the addition of jam.

I cook standard vanilla butter cake to make lamingtons with as I find sponge cake too dry and cardboardy tasting.
No jam - my butter cake has enough sugar.
But I'd vote raspberry.

True, but it was DH's request for his birthday cake.

Trial run of individual lamingtons ended in cake pops before i even attempted to fill them, so I made a slight change & made one giant lamingotn out of 2 full sized sponge cakes (thanks colesworth). Filled with MIL's homemade strawberry jam & cream - went down a treat.
