I'm making one of ds's favourites.. beef mince, red lentil aromatic curry. The leftovers are really good in puff pastry as curry puffs for his lunches.

I'm making enchiladas. I use the old El Paso kit but I add in a whole zucchini, a capsicum, a tin of 4 bean mix and a tin of corn and just use 1 chicken breast. Everyone gets lots of veg and it keeps the cost way down :)

Saturday night is BBQ night.
The rest of the time I meal plan, most of my recipes are from instagram these days.

Im having half a wheel of Brie and sparkling. Rest of the family, they're having breakfast for dinner. It's been a particularly tough time lately and nobody minds. Tomorrow night I have chorizo lentil stew and cous cous on the menu so back on track!

I'm glad you're getting a rest.

It's here http://deliciouskitc...ntil-curry.html not sure why she talks about chilli when there isn't any, but you could easily add some. I add in whatever grated veg I have.. tonight it's just carrot and some leftover corn kernels, but zucchini, eggplant, cauliflower, sweet potato, pumpkin, mushrooms all work very well.

Tonight is beef and vegetable stew with fluffy dumplings.
Last night was the beef roast from whence it came :D along with onions, carrots, and crispy rosemary potatoes.
Night before that was a Mexican chicken and veg skillet with refried beans and salsa fresca.
No idea about tomorrow! Probably something vegetarian.

We had steak sandwiches tonight.  I was supposed to make Roast Chicken but I forgot and it was going to be ready too late so we will have the roast tomorrow.

Menu Plan for this week

The two meals above plus
Lasagne
Chicken and Spinach rissotto
Chilli Con Carne
Homemade Pizza
Homemade fish and chips with Salad

We spent all day at The Ekka in Brisbane so it was brinner here tonight.

Tomorrow night - roast beef and veg.
Monday night - creamy chicken noodle soup.
Tuesday - pies made from leftover roast and veg.
Wednesday -,parmesan crumbed lamb cutlets and chickpea and tomato salad.
Thursday - fried rice
Friday - going out
Saturday - Vietnamese spring rolls

My basil sauce is Cream and Basil Pesto mixed together and any veggies l like thrown in with the chicken.

Cook half a packet of fettuccine in boiling salted water.
While this is cooking, cook diced bacon and sliced mushrooms in a large frypan with crushed garlic clove if you wish.
Whisk one egg, one egg yolk and 1/3 cup thickened cream (I like the light cooking cream).
Drain pasta and add to pan, turn off heat and stir through the cream/egg. The heat from the pan and pasta will cook the egg.
This makes enough for me and Mr 18 or enough for just him if extra hungry. I have also made it with cooked broccoli florets added or frozen peas cooked in with the pasta.

My gourmet effort tonight, just for me, was steamed brown rice mixed with a pack of those frozen veg with creamy sauce plus some grated cheese. Surprisingly delicious!

Fish & chips w overdone steamed veg.

I have a new induction cooktop and for some reason I keep failing at steamed veg. It takes longer than gas and I cant work out the timing....

The fish turned out pretty good at least.

Left over slow cooker beef stroganoff. It was awesome today and was even more awesome yesterday.
