Quiche recipe
Without pastry

Anyone have a simple recipe for quiche lorraine? Preferably without pastry.

My mother in law makes a great quiche that has no pastry (father in law is Coeliac).

You use about a cup and a half of cooked rice mixed with a beaten egg, s & p to taste. then you just push it all really firmly into the quiche tin thing.

I can't remember the recipe for the actual mix but its a pretty standard, bacon, egg, cream and cheese mix...oh and onion. I like it with a bit of fresh parsley mixed through as well.

3 eggs
1/2 cup self-raising flour
1 cup grated cheese
1 tablespoon oil
1 1/4 cups milk
1 onion, finely chopped
2 rashers bacon, finely chopped
S&P to taste

Turn oven to 180C, grease quiche dish and place it in the oven while you make the filling.
Place all ingredients except bacon in food processor or large bowl, and either whizz for 30 secs or whisk briskly until combined.
Pour mixture into hot quiche dish, evenly sprinkle over the bacon and any other fillings you like eg mushroom, tomato, spinach etc.
Bake for 25-30 minutes, or until golden and mixture is set.


Well firstly - I don't like quiche. BUT I just used your recipe to make some lunch for DS, and it was freaking tasty! biggrin.gif I added mushrooms and parsley, and used vintage cheese...was so good!

I agree. However, my kids will eat pastry less quiche but if I call it frittata they won't.  shrug.gif
I roll with it. I also tend to think of a frittata as having cheese and a quiche doesn't. As mine is always dairy free who knows what I should really be calling it.

ohmy.gif OMG... all these years I've been serving up "quiche" and wondering why people kept telling me it was odd that I didn't use pastry... but absolutely stuffed the thing with heaps and heaps of cheese!!  I've been doing it wrong!!  LOL.  Ah well... i make a mean frittata....  biggrin.gif
