Leftover Roast Beef
Any ideas for dinner tonight?

I have a piece of leftover cooked roast beef.  (Easily enough for four people).

Can anyone suggest ideas what I could make for dinner with the beef?

I don't particularly want a salad - we had a lamb salad last night.  I was thinking maybe a shepherd's pie but, the weather's a bit warm for a hot dinner.

Has anyone got any great ideas they would be willing to share?

Make a Thai beef salad.

That works just as well with cold cooked meat as hot.

Oh yeah, and just for the record and if you do make it into a mashed potato topped pie (which is what I'd be doing as it isn't hot here today - hoorah!)

It is a cottage pie not a shepherd's pie... shepherd's pie's are lamb (unsurprisingly!).

Exactly this.

Or otherwise roast beef, mustard, pickles, tomato, lettuce rolls.

I like the idea of roast beef wraps. With mustard and salads. YUMMO.

Otherwise: Beef and Polenta - cook polenta and stir in cheese, heat beef and remove set aside. Heat up some tomatoes (fresh or tinned), mushrooms and rosemary (or whatever herbs you like) for 3 or so mins. Put beef back in the pan with some white wine and worcestershire sauce and simmer to cook.

Chilli Con Carne

Or serve cold with a 'salsa' of corn, tomatoes, mixed beans, lemon juice and coriander.

My mother was very civilised in her responses to those who misnamed their pies.  
Usually she would delicately point out in a conversational "Actually, did you know.." manner or if she knew that would cause a ruction or worse still if she HAD pointed it out and was met with an "Aww it doesn't matter, I call it X anyway.."  she would get home, sigh a little, and then say "It's a shame really... now I can't help but feel a little less fond of them, wilful ignorance is never attractive."

Sorry - cottage pie, not shepherd's pie .... it just tends to roll of my tongue (well, on the Internet, rolls off my fingers while typing laugh.gif ).

So, I ended up making a beef casserole.  I chopped the beef into about 2cm cubes, added an onion, garlic and heaps of chopped vegies - sweet potato, potato, carrot and fresh rosemary.  Added tomato paste, tinned tomatoes, beef stock, a slosh of red wine and salt & pepper.  Soon I'll top with some fluffy, cheesy dumplings and serve with steamed peas and beans fresh from the lovely neighbors garden.  

It's so not the weather for a casserole but, meh, time was dictating a quick decision and my kids love a casserole.  They also love eating it with those el-cheapo bake-at-home rolls.  

Thanks for all the suggestions - and, the friendly debate re: cottage v's shepherd's pie.
