Need to make GF and DF cake by 10am
Would it work with these ingredients?

Science hats on here people!

I want to make a chocolate cake for morning tea. Two of us are GF/DF and I'm trying ot adapt this recipe:
2 ½ cups flour or wheat-free flour blend
1 ½ cups sugar
1/2 cups cocoa
2 teaspoons baking soda
½ teaspoon salt
2/3 cup cooking oil
2 tablespoons vinegar
1 tablespoon vanilla
2 cups cold coffee (or make with instant coffee or just use cold water)

I will use Copha instead of cooking oil as I only have Olive here at the moment  sick.gif. I'm out of vinegar - can I get away with it?

OR should I just chuck in the towel and buy some rice crackers and dip on the way there?

Not sure about adapting your recipe but t his one is delicious - don't let the beans put you off!  It has butter but that could easily be replaced with oil of some kind. It needs to be eaten within a day or 2 though because it can dry out original.gif

You can't get away with dropping the vingear-- it is an egg replacer!

I usually just go to the supermarket, buy a gluten free packet mix and substitute products (nuttelex, rice milk etc) to make it dairy free original.gif

deejie - I skipped the vinegar as I only had apple cider in the cupboard... after it went in the oven I realised I had No Egg egg replacer in the cupboard  ddoh.gif

Oh well, its in the oven. I'm keeping the biccie and dip combo up my sleeve just in case.
